Hello guys
Long time no see… I know
The World around keeps me busy you see ; including my 6 months old adorable and chirpy niece.
Also the days have been soo very hot out here, expecting the same in your city… phewww
Anyway the foodie that I am I lately visited Indore city for some work and ended up in the streets of the very famous Sarafa bazaar. Ate like a pig , yeah right!! And I must say it was Wowsome , I mean the variety , the flavors , just so catchy. Amongst all one dish I could not miss but try and it’s called Indori Patties!! Well yeah I am not such a fan of fried food but then sometimes you can’t just stop yourself for cooking something and sharing. It is one such thing. Also if you’re not a fan of coconut go no far, it’s for all the coconut lovers out their just like me!!

So Indori patties

Ingredients
  • 5  parboiled potatoes
  • 2 table spoon corn flour
  • 2 garlic
  • 1 tea spoon grated finger
  • 1 cup dry shredded coconut
  • Lemon as per taste
  • Salt as per taste
  • Green chilly as per taste
  • Oil for frying



Method
  • Grate the potatoes and add corn flour and salt to it and mix it well
  • Take dry coconut , lemon juice, garlic, ginger, green chilly and mix them in a food processor.
  • Take a drop of oil in your palm and make lemon size ball of potatoes by filling the coconut mixture into it.
  • Heat the oil and let these balls fry until golden.
  • Serve hot in a bed of oil soaking paper with tamarind sauce or your choice of chutney.

P.S You can always make a chaat out of it adding a little curd and green chutney along with tamarind sauce and spices!!

Quiche/Pie Dish




Finally the long pending quiche as a Sunday meal. It’s double cheese Quiche
Glad to create this very special savoury , It is a dish originated in France.
This dish is surely time taking , but it’s worth it and it’s a complete meal nourished with all the nutrients we need , also it’s something to share and eat , one quiche for a family is a good idea actually.


We’ll make it in two steps.

1 - The Quiche
2 – The filling

Ingredients
  • Butter (Amul) – 50 gm
  • Grated cheese  -  2 tablespoon  (Optional)
  • Baking Powder – ¼ tea spoon
  • Basil – ½ teaspoon (Optional)
  • Ice Water – ¼ cup
  • Salt – ¼ tea spoon

Method

  • Collect all the ingredients in a bowl except ice water
  • Refrigerate  for around 20 min
  • Now mix them  with very less pressure and it’ll form crumbs Add ice water to it only as much to form a dough
  • Now Form a 1/4th inch thick round and place it in the pie dish which is also called loose bottom pie tin (Refer the picture)
  • Prick it so as to avoid it from rising like a cake
  • Now place it in the preheated oven for 10 min at 220 degree.



Filling

  • Mixed Boiled vegetables 2 cups 
(Carrot , beans , capsicum , sweet corn)                                     

  • Cheese Sauce
(1 cup milk,cheese & ¼ cup cream)
  • Salt
  • Mixed herbs
  • Method - 
  • Mix all the ingredients 
  • Add ½ cup cheese to it
  • Bring them to boil
And it’s Ready

Now pour it in the above baked quiche and bake it again for 15 min in 200 degree
 or till you sense it’s not burnt .
Let it rest for 2 min
Carefully place it in the serving plate.

Now don’t wait and dig into it.


P.S. Choose vegetables of your choice , you can also opt for only Spinach or your favourite vegetables. Let your imagination fly like I always say
P.P.S Also if you are not a cheese fan use half the quantity and you can opt for red sauce as well in this dish. So variations are many.

Pink Coconut Shake


I’m a coconut person. It’s refreshing and pungent
So when I was thinking of preparing a shake I thought first lemme make coconut milk. Cow milk is mundane.
Not that I don’t drink cow milk every day :D
So here goes a coconut dominated shake with a dash of strawberry for color and supportive flavor.

Ingredients
  • 1 cup Coconut milk* (Readymade or homemade)
  • 1 cup thick sweetened cream or whipped cream
  • ½  tea spoon Strawberry crush
Garnishing
  • 1 spoon desiccated coconut
  • 1 inch chocolate strand
  • 1 spoon tutti fruitti 

Process
  • Mix all the ingredients together and give it a nice shake. 
  • Never use a blender as it’ll spoil the consistency, we want it thick and regal.
  • For garnishing use desiccated coconut for covering the upper layer of the shake and spread chocolate strand and one tutti fruitti of red color to give it the x factor.

*Coconut milk
  • Grate a coconut and blend it adding water gradually in electric blender/mixie
  • Half cup to one cup water according to the consistency required. 
  • After that strain in and the milk is ready
  • Keep it on the thicker side as we’re making thick shake

P.S Feel free to switch the flavor, strawberry crush can be replaced with pineapple , chocolate, butterscotch and what not, let your imagination rule!!

Popcorn truffle





Truffle Popcorn

This is perfect for party , a light dessert or a sweet snack as you prefer it. I love it. Popcorn is good for health and so is chocolate if we consume it in limit. So this snack is my favorite as a dessert substitute.
It’s simple and quick

Ingredients
  • 1 bowl salted popcorn
  • 50 gm white compound (I use morde)
  • 50 gm dark compound
  • Sprinklers (optional)

Procedure

  • In a preheated oven at 180 degree , take a greased baking tray .
  • Now spread the popcorn in the tray
  • Heat the chocolates separately in double boiler or microwave it stirring continuously
  • Let the chocolate get warm
  • Drizzle both the chocolates it in the popcorn evenly
  • Now sprinkle it and bake it for 8 to 10 mins
  • Let it cool
Voilaa it’s ready

Corn and Pumpkin Chowder




This was something new for me as well coz my taste for Pumpkin isn’t  developed , but then newness is the key to variety in food,  so I tried this chowder and it turned out unique in it’s flavor. I’d say one try is to be taken by us youngsters for this kinda soup. It has a fresh taste and it’s healthy to be a routine meal specially in the rain and Winters of course!!

Here it goes -

Stalk

Ingredients
1 Corn’s peel
10 Garlic’s peel
½  tea spoon olive oil
500 ml water
Salt to taste

Boil all the ingredients together. Strain it. Stalk is ready.
Roasted vegetable(Paste)


Ingredients
3 Onion
1 potato
½  small pumpkin
1 leek
10 garlic
2 teaspoon Italian herbs
Black pepper
Salt
2 tea spoon olive
Procedure

Take a baking tray, brush it with 1 tea spoon olive oil
 Slice all the veggies and place them in the tray
Sprinkle 1 tea spoon olive oil , herbs , black pepper and salt
Place it in the preheated oven at 150 degree for 15 min
Now make a smooth paste out of this in the grinder mixing it with 200 ml stalk

 Final step


Ingredients
1 leek chopped
1 onion chopped
10 pepper corns
10 garlic chopped
300 ml stalk
1 teaspoon Italian stalk
Paste
Half lemon (optional)

Procedure
Take a pot in the stove and add one table spoon olive oil
Now roast the Peppercorns in it
Add veggies , Italian herbs , stalk and simmer it
Now add the paste and boil it
Add lemon to it.

Garnish
Boil the corn and slice it , 2 inch a slice and chili flakes (Refer to picture)

This is a unique blend of ingredients to come together as a fresh taste.

"Portable Dessert"



So Here comes the festive season.  “The Rakhi time” where in all the brothers are full in their tummy with lots of sweets from sisters all around , so an idea of portable dessert so that the brother is at ease and can have it all round and even all week. A mason jar filled with sweetness.

Ingredients

Vanilla cake pieces
Whipped cream
Choco chips
Sprinklers

Procedure

Decorate the jar beautifully with these ingredients making sure it looks beautiful from outside and when opened it looks prettier. Refer the pictures for understanding what I mean .

Now the outer covering.
In a mason jar filled with the dessert above decorate its neck with a ribbon. As simple as it sounds.
Voila!! Begin it right now to deepen the bond between your brother and you :)

Kiwi Morsel!!


Kiwi Morsel!!

This dish came when my cousin said make something chocolate filled for me. I thought fruits clubbed with it will go the best and of course add to the healthy quotient that we always look for.
This dessert can be made well in advance which makes it convenient. It has a hint of tang that’s added by kiwi to make it all the more tempting.

IngredientsWhipped cream 3 cup
Fresh Kiwi 1
Orange/vanilla essence 1 teaspoon
Chocolate compound ½ cup
Kiwi Sauce*
Chocolate Ganache**
Cake crumbs 1 cup(optional)
Choco chips,cherry for garnishing

*Kiwi Sauce

2 kiwi pureed(Churn it and do not strain it)
1 cup water
2 Table spoon sugar
Lemon juice ½ teaspoon
Take a pan and mix water and sugar keep stirring until half , Now let it cool. Add kiwi puree and lemon juice to the mixture when it’s at room temperature. Mix all. Ready!!

**Chocolate Ganache

Melt the chocolate in double boiler or microwave it till it melts stirring in the middle.
Now add the melted chocolate to 2 cups whipped cream and mix them to form ganache
Add the orange/vanilla essence to it.

Procedure
Now take the desired bowl , glass or the dish which you want to prepare it in.
Begin with kiwi sauce layer around 1 tablespoon, next add a layer of cake crumbs, ganache ,add whipped cream’s layer , now again comes the ganache and top it with the kiwi sauce. (Refer to the picture)

Now Comes beautification part
Garnish with a slice of kiwi , choco chips ,  whipped cream and cherry(Refer to the picture or I’d say let your imagination take over the beauty of the dish)
If you’re willing to Store it cover it with cling film and refrigerate.
It tastes better when refrigerated for 4- 5 hours.
Stays fresh for 4 days
P.S The kiwi sauce can be refrigerated in a mason jar for minimum 10 day , It’s good with breads and rolls and you get to enjoy preservative less food.
