Lamington!!




  I’m an explorer , whenever I come across anything new I’ve to try it and this time it is this
“Authentic Dessert from Australia” called Lamington.
 It’s basic sponge cake pieces coated with chocolate and sprinkled with desiccated coconut. Having a giant sweet tooth lands you with lot of new sweet snacks!!
This one holds a special place because it’s made for my Mum’s 50th. She loved it I hope you guys too will.
It’s simple ,toothsome and of course looks Gorgeous.
I’ve given it my own twist a little away from the authentic style because what’s the fun without a little add on of our own.



Ingredients
  • 5 pieces of basic sponge cake
  • 200 gram Chocolate compound (Morde – Milk ,dark or white)
  • ½ tea spoon Rose essence (optional)
  •  2 table spoon desiccated coconut
  • Cherry 5 pieces
  • 5 Mint leaves



Procedure

  • Cut the cake into pieces of desired shape and size. I prefer pizza slices shape – Thin triangles.
  • Melt the chocolate compound in double boiler or microwave
  • Let the chocolate cool for 2-4 min
  • Add Rose essence to melted chocolate compound (You can add any essence of your choice)
  • Dip the cake piece into it one at a time
  • Coat it with desiccated coconut
  • Let it set in the refrigerator for minimum 15 min
  • Garnish it with Cherry , mint leaves or something that gives it an X factor coz if it looks good it’s always perk added to the dish.

I've added a little color to the Coconut when i coated it with white chocolate to make it visible and attractive.

Pizza - it's Base and Ball!!


Pizza and Beyond!!

Well this was a long long awaited try since I thought base wouldn’t be easy or come out perfectly but to my surprise we can make thin crust /pan pizza’s at home easily. It feels good to give the base your imagination ,Shape , size and of course flavor  after all that’s what the aim is ,doing something new whenever we cook .This recipe needs to be given a try by everyone who’s fond of Pizza , and who isn’t!!!!

Here I am sharing the base as well as the exact topping I preferred though toppings, sauces ,fillings can all be played around.

Ingredients for the Base.

  • Refined flour – 500 gram 
  • Sugar – 2 tea spoon
  • Salt – 1 tea spoon
  • Dry yeast –  2 ½ tea spoon
  •                   or  
  • Fresh yeast – 25 gram
  • Warm Water – 250 ml
  • Butter – 2 table spoon
  • Milk – 2 table spoon




Procedure
  • Mix yeast and a tea spoon sugar in ¼ th  cup warm water and stir it till the yeast  dissolves ,cover it and keep it aside for 5 min (Bubbles should be formed otherwise the yeast isn’t good, don’t use it)
  • Mix 1 tea spoon sugar ,salt , yeast mixture and water in the flour . Gradually add butter and knead the flour for 8-10 min until it becomes a soft dough (Kneading is a must)
  • Now make a ball and keep it aside for an hour in a bowl sprinkling it with little dry refined flour and covering it with a damp cloth.
  • Post an hour make 10 – 12 small balls out of this 1 giant ball which is now almost twice the size you kept.
  • Now again keep it aside for 20 min
  • The dough is ready to use.
  • Keep the dough covered with damp cloth all the time. Also if you’ve made this dough in advance , refrigerate it , can stay upto 48 hours.










 Ingredients for Topping 5 pizzas

  • Pizza & pasta sauce . (I use Funfoods) 
  • Tabasco sauce (optional)
  • ½  cup vertically chopped capsicum
  • ½ cup vertically chopped onion
  • ½ cup vertically chopped tomato
  • ½ cup vertically chopped baby corn
  • ½ cup sweet corn boiled
  • ½ cup jalapeno sliced (I use Luciana’s)
  • Grated cheese 1 cup or more as per choice 
  • Oregano, salt, chili flakes as per taste
  • Fresh Basil/coriander to garnish


Procedure

  • Take a ball from the dough and make a thin round like a chapatti and prick it with a knife .
  • Now place this in the baking tray which is greased.(Placing in the tray is vital here, after topping it’s difficult to place it.)
  • Spread the sauce, cheese and top it with the vegetables.
  • Now sprinkle oregano , salt , chili flakes.
  • Top it with more cheese if you like.
  • Bake it in pre heated oven for about 15 - 20 min in 200 degree.
  • If you want to make a PIZZA BALL don’t prick it at all rather -
     Decrease the amount of  topping , bring the sides together and fold it at the end to form a ball , brush it with milk and bake it same as above.
  • Now you’ve hot slices and balls of pizza ready !!

    Garnish it and Enjoy!!

    Little time taking but not difficult at all and it is an Accomplishment!!

Red Velvet Cookies!!


I’ve major : major sweet tooth. I always need something new and exciting to eat , if it has a hint of chocolate woo ,nothing better. Cookies are like very handy , eat them post dinner ,while driving ,in the tiffin for kids or with tea. Though I’m not a tea person but my Mum & Bhabi seem to enjoy cookies with tea. So I prepared these beautiful multi-shaped Velvety Red Cookies to fill in your sweet/dessert appetite.


Here it goes



Ingredients
  • All purpose /refined flour – 150 gram
  • Coco powder – 2 table spoon
  • Baking powder – ¼ tea spoon
  • Salt - ¼ tea spoon
  • Powdered sugar – 100 gram
  • Melted Butter – 125 gram
  • Rose essence – ½ tea spoon
  • Choco chips – 2 table spoon (optional)
  • Red food color – 1 table spoon

Method
  • Whisk all the dry ingredients except sugar
  • Mix sugar and butter until fluffy
  • Now add in it all the whisked ingredients along with vanilla essence , red food color and choco chips forming a dough
  • Make a ¼  inch chapatti like with the dough and cut it into desired shape with the cookie cutter or make mini balls and flatten it as per your desired size of round shape.
  • Now for décor place few choco chips above these (refer pic)
  • Grease the oven tray and place the cookies leaving ½ inch space in between them
  • Bake it for 30 min in a pre heated oven in 180 degree.
  • And the crunchy treats are ready!!

Fit Canapés!!

These little pieces can be a snack everyone from kids to grownups are gonna love. Easy to Prepare and easier to share. When in hurry they are specially the life saviors.  So surely try them.

Ingredients

Canapés  (I use Dip canapés )
Sprouts 2 cups (equal quantity of Green Gram, Moth bean and Chickpea)
Roasted peanuts  2 table spoon
Pomegranate 2 table spoon
Chaat masala ½ teaspoon
Black pepper ¼ teaspoon
Lemon  ½ teaspoon
Salt accordingly
Mint leaves/Coriander

Procedure

Mix all the ingredients except canapés.
Now just take one spoon of mixture per canapé and go on filling the canapés.
Garnish with mint leaves or coriander
And start munching!!

P.S If you wanna take them for a picnic or prepare in advance for a party just keep the canapés and mixture separately and fill the canapés momentarily or else it’ll get soggy.

Exotic Peanut butter filled chocolates!!

Chocolate = Instant Happiness ; Permanent Happiness.
 I can have it anytime like literally, hungry or full, in all the low moments of life in jolly time it’s there Always.  It’s like a bestie :p
Even good for our health when eaten in Moderation and specially the dark chocolate. So never stop yourself from this treat. NEVER!!!!

Today I’ll be sharing Chocolate filled with Peanut Butter so an add on Protein as well. WOW!!



Ingredients
Dark/Milk/White Compound (I prefer Morde) - 100 gms
Peanut Butter – 2 Table spoon
Vanilla essence – 10 drops (optional)

Procedure
  • Melt the compound in double boiler stirring continuously till it melts. It’ll take around 3 to 5 min or Microwave it for 2 to 3 min stirring every min.
  • Let it stand for 2 min to be lukewarm
  • Add essence and mix
  • Now pour a tea spoon of melted chocolate into the mold 
  • Take the Peanut butter into a zip pouch and cut it from one end
  • Squeeze the Peanut butter above the  previously poured chocolate.
  • Now pour above the Peanut butter and fill the mold with melted chocolate and freeze it.
  • AND ready! It’s quick, easy and tasty!!
