Stuffed Potato Bites!!

Well Starter/snack/teatime or anytime this is my all time favorite , Specially because potatoes in any form takes my taste buds to a journey they never forget , a delectable one!!
Call it an Italian snack or not but surely give it a try.

Ingredients
  • Small size Potatoes - 20 
  • Butter – 2 table spoon
  • Fine chopped onion – 3 table spoon
  • Fine chopped capsicum – 2 table spoon                     
  • Sweet corn boiled  - ½ cup
  • Tomato sauce – 2 table spoon
  • Capsico sauce – ½ tea spoon (optional)
  • Cream – 2 table spoon
  • Grated Cheese – ½ cup
  • Coriander leaves – 20
  • Oregano – ½ tea spoon
  • Salt and Pepper accordingly



Procedure

For Stuffing  - 

  • Take a pan and heat the butter following with onion and capsicum until the onion turns transparent ,add boiled sweet corn in it and cook a little.
  • Now add tomato sauce, capsico sauce, cream , 3/4th grated cheese ,salt , pepper and stir for 3 min, Add oregano and off the stove!!


       For Potato -

  • Boil the potatoes 80% and without peeling cut them half horizontally or vertically (refer picture) and scoop them. 
  •  Fill it with the stuffing and add cheese on the top. 
  •  Brush the potatoes with butter.
  •  Bake them for about 10 min in preheated oven (180 degree) or until the    cheese melts.
  •  Garnish them with Coriander leaves and it’s ready to fill your tummy.
  •  Hold on – Serve it with ketchup or chilli sauce.


P.S  You can use this stuffing in Kati rolls and sandwiches as well.

The Blooming Orange!!


"The Blooming Orange"

                                                     
So the weekend arrives and I've a perfect drink to bid adieu to the Hot Weather!!
It's bound to chill you inside out and the perk is we make a soda less Mocktail.

       Ingredients
  • 2 Table spoon Orange Squash (Kissan/Guruji)
  • 1/2 Tea spoon Rose Sharbat (KTC/Relish)
  • 1/2 Tea spoon Milk Maid
  • 1/4 or 1/2 Tea spoon lemon as per your taste
  • 2 mint leaves
  • 1 lemon ring (refer the picture)
  • 5 Ice cubes
  • 1 large cup chilled water

    Procedure
  • Take orange squash ,rose sharbat ,milk maid ,lemon and water in a shaker a mix it well - (Liquid)
  • Now take the serving glass and put ice ,mint leaves and lemon ring in it
  • Now pour the above mixed liquid in the glass and serve immediately
Isn't it pretty easy and rejuvenating!!

Chocolate Oats Cupcakes.

First dish calls for a dessert!!
Oats being in trend for health let's experiment with it in the classic dessert replacing the unhealthy all purpose flour.

Here it goes

Ingredients -
  • 1 cup oats
  • 1 cup wheat flour
  • 1.5 cup  sugar
  • 1/2 cup ghee/oil
  • 1/2 cup milk
  • 1/4 tea spoon baking powder
  • 1.5 tea spoon baking soda
  • 1 tea spoon vanilla essence
  • a pinch of salt
  • 2 table spoon cocoa powder

Procedure -
    Blend ghee/oil and sugar well now add all the other dry ingredients in it along with milk in small portions and keep mixing it till the batter turns smooth. Divide it into two portions and add cocoa powder to a portion. Now pour into the molds alternatively with white and brown batter. Bake for 30 - 40 mins in a preheated oven in 180 degree.
Voila!! It's ready. Let it cool for sometime and enjoy it either with a juice/milk or just like that.
